Funfetti Cake

This is one of my most requested cakes! It is so moist, and let's face it, fun to eat!


Ingredients:

-4 flax eggs (4 tbsp. Flax meal mixed with 10 tbsp. warm water)

-1 1/2 cups plant milk

-1 tbsp. Apple cider vinegar

-1/4 cup vegetable oil

-1 tbsp. Vanilla extract

-8 tbsp. Vegan butter (1 stick - I use Earth balance)

-1 1/2 cups sugar

-3 cups AP flour

-1 tbsp. Cornstarch

-1 tbsp. Baking powder

-1/2 tsp. Salt

-1/2 cup sprinkles (you can omit for a vanilla cake)


Buttercream:

-3 cups vegan butter (6 sticks), softened

-1 tsp. Vanilla extract

-6 cups confectioners sugar, sifted


*Note: This frosting recipe is enough to fill and frost a 3 layer cake. You can also opt for half and half vegan butter and vegetable shortening instead.


Method:

Preheat your oven to 350 degrees F, and grease three 7-inch cake pans (can also be made into cupcakes).


Mix the flax and water together and set aside to thicken.


In a small bowl or measuring cup, mix the plant milk and vinegar together. Let it sit for a few minutes to sour. Then mix in the vegetable oil and vanilla extract.


In a large bowl, cream the butter and sugar together. Then add in the flax egg and sour milk mixture. Place a sifter over the bowl and sift in the flour, cornstarch, baking powder and salt. Mix until all the ingredients come together. Then, gently fold in the sprinkles (or mix on low speed).


Divide your batter amongst your pans and bake in the oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.


Let the cakes cool in the pan completely before turning them out and frosting them.


*If making ahead of time and not frosting right away, I recommend you wrap and freeze the cakes to maintain freshness.


For the frosting:

Beat the butter until it resembles a whipped consistency. Then mix in the vanilla. Slowly, mix in the sifted confectioner’s sugar a little at a time. You can always add more or less confectioners sugar if needed.


*It is okay for your frosting to be more spreadable. I like this for frosting cakes because it creates a smoother coat. If adding color to your frosting, mix in a small amount and then use an immersion blender to brighten/deepen your color and to make the frosting extra silky and smooth.
