Coconut Macaroons (Baked)

You'll need:

-3 cups shredded coconut

-One 11 (or 12) oz. can of sweetened condensed coconut milk

-1/4 tsp. salt

-Optional splash of vanilla extract (can omit or sub almond extract)

-Optional melted vegan chocolate for dipping


Method:

Preheat oven to 350 degrees F.


Mix together all ingredients, except the melted chocolate, until the mixture starts to stick together. Once it does, use a spoon to form mixture into balls (a little larger than a golf ball), and place on a lined baking pan.


Bake 18-20 minutes, or until edges lightly brown and tops start to lightly golden.


Allow the cookies to cool completely before dipping into chocolate (if using). Enjoy!
