Italian Wedding Cookies
These Italian Wedding Cookies are so delicious and easy to make. They are also quite versatile! While they are typically made with ground almonds, you could swap in walnuts or pecans or do a mixture of both.
You'll need:
-1 cup vegan butter (2 sticks)
-1/2 cup sugar
-2 tsp. Vanilla extract (optional to sub 1 tsp. For almond extract)
-2 cups AP flour
-1 cup almond flour (recommended to blend whole almonds so you still have some tiny almond bits in the cookie - this is optional)
-Powdered sugar for rolling
Method:
Preheat oven to 325 degrees F.
Cream your butter and sugar together. Then mix in the vanilla (or almond) extract. Once combined, mix in your AP and almond flour until your dough comes together.
Using your hands or a small cookie scoop, roll your dough into little balls, about the size of a golf ball. Place your dough balls on a lined baking sheet and bake for 18-20 minutes. Once baked, allow your cookies to cool for about 15 minutes. Then, while they are still a little warm, you will roll your cookies in powdered sugar to coat.
