Panna Cotta

You’ll need:

-1 cup vegan whipping cream or coconut cream (coconut milk from a can works too)

-1/2 cup plant milk

-1/4 cup sugar

-1/2 tsp. Agar agar powder

-1 tsp. Vanilla extract

-Pinch of salt


Optional Berry Topping:

-1/2 cup fresh berries

-2 tbsp. Sugar


Method:

In a saucepan, BEFORE turning on the heat, whisk together the sugar, agar and salt. Then turn the heat on, add whipping cream, milk and vanilla.


Whisk to combine all ingredients and bring to a boil. Once the mixture boils, lift the pan up from the heat for a moment and whisk down. Repeat this process 3-4 times. This helps to activate the agar and will only take a few minutes total.


Pour the mixture into ramekins or molds (it will still be very loose - don’t worry), and let cool for about 15 minutes. Then cool, uncovered, in your fridge for at least 1 hour, 2 is ideal.


Eat as is, or top with fresh fruit or berry glaze.


*For the berry syrup, simply heat ingredients together in a pot until berries reduce down. Enjoy as is or push through a sieve if you don’t like chunks.


**Note, I prefer panna cotta to have a creamier, melt in your mouth texture, so I use much less agar powder than other recipes. I find that a little agar goes a LONG way.
